Harvest muffins are not one rigid formula. The name is commonly used for hearty muffins built around seasonal produce and pantry mix-ins. Project Bread’s version uses zucchini, carrots and applesauce, while Golden Harvest Muffins combine carrots, apple, coconut, raisins and almonds.

Ingredients

  • 1 1/2 cups (188 g) all-purpose flour
  • 1/2 cup (45 g) rolled oats
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon + 1/4 tsp nutmeg
  • 2 eggs
  • 1/2 cup (100 g) brown sugar
  • 1/3 cup (80 ml) neutral oil
  • 1/2 cup (120 g) Greek yogurt
  • 1 tsp vanilla
  • 1 cup grated apple
  • 3/4 cup shredded carrot
  • 1/2 cup shredded zucchini
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts or pecans

Instructions

  1. Heat oven to 375°F (190°C) and line a 12-cup pan.
  2. Whisk flour, oats, leaveners, salt and spices.
  3. Whisk eggs, sugar, oil, yogurt and vanilla.
  4. Fold apple, carrot and zucchini into wet ingredients.
  5. Fold in dry ingredients just until almost combined.
  6. Add cranberries and nuts with the final few strokes.
  7. Divide among 12 cups and bake 20–24 minutes.
  8. Cool 5 minutes in pan, then rack-cool.

1. Why This Combination Works

Apple supplies sweetness and moisture; carrot gives body; zucchini adds moisture without dominating the flavor; oats make the crumb heartier; cranberries concentrate tart sweetness; and nuts create contrast. Existing harvest recipes use similar produce-heavy structures.

2. Control the Moisture

Apple and zucchini release water. Do not squeeze them bone-dry, but lightly press unusually watery zucchini. Grate apple shortly before mixing. The finished batter should be thick and scoopable rather than pourable.

Key rule: adding extra produce also adds liquid. Do not compensate by adding more yogurt or milk unless the batter is genuinely too stiff.

3. Apple Cinnamon Harvest Muffins

Use 1 1/2 cups grated apple, omit zucchini, increase cinnamon to 2 teaspoons and add 1/3 cup pecans.

4. Pumpkin Harvest Muffins

Replace zucchini and yogurt with 3/4 cup pumpkin purée. Add ginger and a pinch of cloves. Pumpkin, carrot and raisins are also used together in existing harvest-muffin recipes.

5. Carrot Raisin Harvest Muffins

Use 1 1/2 cups carrot, omit zucchini and cranberries, and add 2/3 cup raisins. Coconut is optional; this approaches the Golden Harvest style.

6. Cranberry Orange Harvest Muffins

Use 3/4 cup dried cranberries, omit zucchini and add the zest of one orange.

7. Banana Nut Harvest Muffins

Replace apple with 1 cup mashed ripe banana, omit zucchini and use walnuts.

8. Chocolate Chip Harvest Muffins

Replace cranberries with 3/4 cup semisweet chocolate chips while keeping the apple, carrot and zucchini base.

Keep dried fruit, nuts, seeds, coconut and chocolate combined to roughly 1–1 1/2 cups unless you rebalance the flour and liquid.

12. Why Harvest Muffins Turn Dense

Too much zucchini water, excessive oats, too many mix-ins and overmixing can all make these muffins heavy. Produce-heavy formulas need enough flour and leavening to support their moisture.
