Air fryers can bake muffins well, but their compact, high-speed airflow changes the important variables: cup stability, basket spacing and how early you check the top.

Set up matters more than a universal temperature
An air fryer is not one standard appliance. Basket shape, heating-element distance and whether the appliance has a true bake setting all affect the surface faster than the center. First confirm that your muffin cups fit with room for air to circulate and do not sit loose enough to tip. Paper liners are fine only when held by a rigid muffin pan or a substantial silicone cup.

- Start at a moderately reduced temperature compared with the conventional oven direction, unless your appliance manual gives a specific baking program. Check early rather than trusting a conversion formula as a guarantee.
- When tops first look set, check one center muffin with a tester or gentle touch. If the top is colored but the center needs more time, reduce heat slightly rather than simply extending high heat.
- Cool the muffins briefly in their supports, then transfer to a rack. This prevents trapped steam from making the underside wet.

What to change when the batch looks wrong
Brown top, underdone middle: the heat is too aggressive for the depth of the cup. Lower the temperature and give the center gentler time. Pale and flat: the basket may be crowded or the leavener may be weak; do not stack cups. Paper liners spread: they need a rigid pan or silicone support. Uneven batch: basket position and airflow differ, so rotate only if your appliance and the batter can tolerate the interruption.
The value of the air fryer is small-batch speed, not a promise that every 12-cup oven recipe will behave identically. Treat the first batch as a calibration run and record the cup type, setting and visual cue that worked in your own appliance.
