Arancini are already rich, crisp and filling. The useful side is usually fresh, acidic or vegetable-forward: a lemony salad, tomato sauce, roasted vegetables or caponata make a better plate than another starch-heavy dish.

The best sides for arancini

1. Lemony arugula salad

This is the safest choice when you do not know the filling. Arugula has enough bitterness to stand up to fried food, while lemon and olive oil add freshness. Add Parmesan only when the arancini are not already cheese-heavy.

2. Simple tomato sauce

Tomato sauce brings moisture and acidity to the crisp rice ball. Keep it loose and serve it underneath or on the side; covering arancini several minutes early softens the coating.

3. Fennel and orange salad

Use this with rich ragù or sausage fillings. Thin fennel gives crunch and citrus makes the meal feel lighter. Keep the dressing sharp rather than sweet.

4. Caponata

Caponata keeps the plate Sicilian-inspired while adding eggplant and sweet-sour contrast. Use a modest spoonful beside the arancini, especially if both components are oily.

5. Roasted peppers with parsley

Peppers add sweetness and juiciness without another starch. Drain jarred peppers well, then add parsley and lemon or vinegar. They are particularly useful on an appetizer platter.

6. Garlicky greens or asparagus

A warm vegetable side turns two or three arancini into dinner without making the plate much heavier. Finish greens or asparagus with lemon, and do not add a heavy Parmesan crust when the filling is already creamy.

What not to serve with arancini

Ask what the second item adds: freshness, acidity, vegetables, moisture or a noticeably different texture.

Arancini as an appetizer or a main

One small arancino can be an appetizer; several substantial ones can anchor lunch or dinner. For a plated main, use two or three arancini plus one generous vegetable side and one acidic element. Start with the filling, add what it lacks, then stop.
